Nut Free, Oat Free, Low Histamine Granola

Quick question… why is granola so darn delicious? Ok, back to the story of my weekend.

This past weekend my husband and I went to visit one of my best friends from high school. She and her family live up in Geneva, New York. It is one of the most pristine, relaxing, beautiful places to vacation. She lives right on the Finger Lakes and waking up every morning to the quiet lapping of the lake just never gets old.



One morning she, a couple of her friends and I greeted the sunrise with SUP yoga. Now, I’m a self-proclaimed yogi that likes to think she’s the bomb at sun salutation, but dammmnnn yoga on a paddle board is tough! I could barely get into down dog without rocking a rolling on the board.


Eventually I was stable enough to pop up into crow and then finally a bridge. It was so much fun and I will definitely be checking out my local SUP classes on the Hudson River… ooor, not…gross.

Although my friend is a fabulous cook that lives by a paleo diet, we ended up eating out the entire trip and enjoyed a boozy garlic dinner at a local vineyard on Saturday night. I always do my best to find a low histamine meal option when out to dinner, but when you’re two wine tastings in, you think you own the world – so, dairy, glutinous, fried food was had by all.


When we got home I was so uncomfortable and in need of fresh, wholesome food. So, while my husband enjoyed some time vegging out on the couch watching Game of Thrones re-runs, I decided to whip up some oat-free granola, a breakfast favorite, that would get me back on track.

Oat free and nut free paleo granola

Nut Free, Oat Free, Low Histamine Granola

Serves: 8 Cooking Time: 45 minutes

Ingredients

  • 4 tbsp coconut oil
  • 2 tbsp ghee
  • 1/2 cup organic honey
  • 2 tbsp organic pure maple syrup
  • 2 tbsp coconut butter
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 1/2 cups quinoa flakes
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup pumpkin seeds (optional)
  • 2 tbsp chia seeds (optional)

Instructions

Preheat oven to 300 degrees

Line a cookie sheet with parchment paper

Combine all the wet ingredients in a large mixing bowl

Stir in all the dry ingredients into the wet until combined

Pour mixture onto the lined cookie sheet into an even layer

Bake for 30 minutes, or until lightly browned

Let cool for 5 minutes to harden the granola

Break apart with a fork and enjoy!

My favorite way of eating this granola is for breakfast with a little hemp milk. The crunch is amazing and the creamy-ness of the milk just adds a little something special. My husband’s favorite way of eating it is by the handful, like a Targaryen… just kidding, more like a Wildling.
