Easy Black Bean Brownie Recipe – Decorated for Christmas

Growing up I had Christmas tree ornaments that were each of the reindeer from the Rudolph song. Each one was jazzed up just a bit based on their names. For instance, Donner wore a 3-piece suit and top hot. Vixen looked like an old-timey movie star. They were all absolutely adorable and definitely my fave ornaments to pop on the tree.

I guess you could say that I’ve always had an affinity for the classic song, so it’s only appropriate to make these little Christmas friends into a holiday dessert!

I know that black bean brownies have been all the rage recently, so in my quest for chocolaty goodness that’s semi low-histamine, I decided to use them as a base of these holiday treats!

Now, I know that chocolate and carob are not paleo or low-histamine. But, if you have to eat something fun and delicious over the holidays, I recommend these adorable treats!

Easy Black Bean Brownie Recipe

Serves: 8 Cooking Time: 30 minutes

Ingredients

  • 15 oz rinsed black beans (one can)
  • 1/2 cup cocoa powder (you can alternatively use carob powder)
  • 1/2 cup + 3 tbsp coconut sugar
  • 2 tbsp coconut oil
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/2 tsp baking powder
  • Pinch of salt
  • Mini Pretzels
  • Candy eyeballs
  • Nilla Wafers
  • Chocolate candy (M&Ms or UnReal chocolate gems)
  • 1/2 cup carob chips
  • 1/4 cup carob powder
  • 2 tbsp dairy free milk (I used almond)

Instructions

Preheat oven to 350 degrees

Blend black beans, cocoa powder, coconut sugar, coconut oil, eggs, vanilla, baking powder, salt in a food processor until smooth

Scoop the batter into cupcake tins and bake for 20 minutes

Once brownies have cooled, remove from cupcake tins

Add carob chips, carob powder and dairy free milk to a small saucepan and whisk together on low-medium heat. If the chocolate is not thick enough, add in more carob powder

Smooth the chocolate frosting onto the brownie with a spoon

Take two mini pretzels and insert into the top side of brownie to make antlers

Using chocolate frosting dab the back of the candy eyeballs and place in in upper part of brownie to make eyes

Dab a bit of frosting on the back of a Nilla Wafer and place in the middle of the brownie

Using another dab of frosting, stick the M&M or UnReal chocolate gem on the Nilla Wafer
