My husband and I are on our way up to the Finger Lakes this weekend to visit one of my best friends growing up. I love visiting her because not only is it beautiful and relaxing upstate, but she’s also an awesome chef! She loves whipping up healthy recipes and, like me, she prescribes to a rather strict paleo diet.
It takes about 5 hours to go from NYC to upstate New York, so snacks are a must. One of my go-to’s are kale chips. They’re quick to cook up and totally portable.
Like, broccoli, it took me a while to warm up to kale. But once I started to appreciate its versatility and overall yummy-ness, I started making everything with it… smoothies, salads, sautés. Kale is now my number one green! So, here’s my quick and easy kale chip recipe that you can enjoy this weekend!

Easy To Make Kale Chips

- 1 bunch of kale, washed and stems removed
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp cayenne pepper (optional)
Instructions
Preheat oven to 350 degrees
Cover a baking sheet with parchment paper
Place the kale is a large bowl and drizzle the olive oil onto the kale
Sprinkle the salt, pepper, garlic powder and onion powder onto the kale
Mix around with your hands
Place the kale in one layer on the baking sheet and bake for 10 minutes
Remove the kale from oven and let sit for two minutes (this allows the kale to crisp up)
