Salmon Burgers – Gluten Free, Low Histamine

Do you ever get in a mood to clean out your cabinets or just purge your closet? This happens to me every so often. I suddenly get the need to donate all my clothes and clean like a mad woman. I’m not sure what brings it on, but the other day this happened to me with my refrigerator. I became obsessed with clearing it out and starting fresh.

So, in this fit of starting anew, I pulled everything out of the refrigerator and freezer and took stock…  4 filets of random frozen fish, 2 bags of celery (why two? I have no idea), a huge head of cabbage… It went on from there.

Looking at what I had it became clear that it all needed to be cooked, or else it would taunt me the rest of the night. So, that’s where my gluten free, low histamine salmon burgers were born.

Now, my husband really doesn’t enjoy salmon. I’ve tried for years to get him to like it but for some reason it’s just been one of those things in our marriage that I’ve had to give up on. Strangely enough he loves salmon sushi and smoked salmon… so I personally think it’s all in his head…

Anyways, when I whipped up these salmon burgers I was surprised when he reached for one. I held my breath and waited for his usual, “Eh” salmon response.  But, to my surprise this time he nodded his head and said, “Mm, good”. #WIN!

I like to serve them in a lettuce wrap, but they’re great on a salad or burger bun.

Salmon Burgers

Ingredients

  • 1/2 lb salmon
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp freshly cracked pepper
  • 2 tbsp ghee + another 2 tbsp
  • 1 celery stalk, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1 tsp Old Bay Seasoning
  • 1 tsp garlic powder
  • 1/4 tsp hot sauce
  • 1/2 tsp honey
  • 1 cup gluten free bread crumbs (These Schar bread crumbs are my fave)
  • 2 eggs
  • 3 tbsp mayonnaise*

Instructions

Preheat oven to 350 degree

Place the salmon fillets skin side down on a parchment paper lined baking sheet

Brush the salmon with olive oil and sprinkle with salt and pepper

Bake the salmon for about 15 minutes, or until just under done

When salmon is done, flake it into a large bowl with a fork and let cool in the refrigerator

Add ghee to a skillet and heat on medium-high heat

Add the finely chopped celery, bell pepper and onion and cook on medium-high heat until soft

Add in the Old Bay Seasoning and garlic powder to the pan and cook one more minute

Combine the salmon, onion mixture, mayonnaise, bread crumbs, hot sauce and honey, mix well

Heat the remaining 2 tbsp ghee in a clean skillet

Scoop a handful of the mixture in your palm and mold with your hands into 2" wide by 1" thick patties

Add the patties to the skillet and push down with spatula to flatten a little

Cook for 3-4 minutes per side until browned

Remove from skillet and place on a paper towel lined plate
