Gluten Free Pup Cakes

If you’re an “extra” puppy mama like me, you go all out for your dog – and that includes whipping up some gluten free cupcakes (aka pup cakes) to celebrate their birthday.

Today is my baby Maeby’s birthday! She’s turning four (a whole paw), and looking back on the last four years makes me grin from ear to ear.

I never had a dog growing up – I had a cat, multiple birds, hamsters, and a whole pond full of frogs and turtles in my parent’s backyard. I never knew the kind of love you can have for a pet until Maeby came along.  Here are just a few reasons why I’m so obsessed with her:

She gives the best hugs… seriously. She’ll put her paws around your neck and kiss your cheek.

She’s terrified of the sound of the shower, but loves the bathtub.

She’ll love all over people as long as they’re over 5 feet tall.

She destroys all plush toys, except for her stuffed lamb that she’s had for almost two years.

She has great style.

Swimming is her favorite pastime.

Her favorite person in the world is my brother in law, Ben.

Maeby is OBSESSED with balls.

Her best friend is Molly

My life wouldn’t be the same without her. 

 

Gluten Free Pup Cakes

Serves: 6 Cooking Time: 45 minutes

Ingredients

  • 1/4 cup + additional 1/2 cup (for frosting) smooth peanut butter
  • 2 tbsp + additional 1 tbsp (for frosting) honey
  • 1/4 cup pumpkin puree
  • 1 egg
  • 1/2 cup shredded carrots
  • 1/2 cup shredded apple
  • 1 cup of rice flour
  • 1.5 tsps of baking soda
  • 1/2 cup of low-fat Greek yogurt

Instructions

Preheat oven to 350 degrees

Combine 1/4 cup peanut butter, 2 tbsp honey and egg

Add in the shredded carrots and apples, mix well

Add rice flour and baking soda and combine well

Spoon mixture into cupcake tins and bake for 20 minutes

While the pup cakes cool, combine the Greek yoghurt, peanut butter and honey. Using a piping tool, frost the pup cakes
