As a kid I never really ate sweets. My mom hated to bake, so if I ever wanted a treat it was either a piece of fruit or a DIY dessert. I found out by age 8 that rice cereal treats were super minimal effort and didn’t require lots of ingredients. Score!
When I was in college my friends and I would take a break from the books (or beer pong) and whip up a funfetti cake. You know, NBD. It was a great way to avoid studying and to indulge in something delicious. Boy, do I miss those days of being able to eat anything without regret the next day.
This tradition lived on after college between my husband and I. We would bake each other funfetti cakes for birthdays, or, like in college, we’d just find ourselves in the grocery store at 10 pm on a Sunday with a box of cake and frosting in our shopping cart.
I miss the days of buttery Rice Krispie treats and super sweet funfetti cake. So, here’s my recipe that combines the best of both desserts into a low effort, dairy free Confetti Rice Krispie Treat. I know, I know this is not a low histamine recipe. But sometimes you just gotta revisit those epic days in college; however also remember you’re thirty… so it has to be dairy free, gluten free, nut free, but NOT fun-free.
Confetti Rice Cereal Treats

- 2 tbsp coconut oil
- 2 tbsp butter flavored coconut oil (alternatively you can use ghee if not dairy free)
- 10 oz bag of marshmallows
- 5 cups rice cereal
- 1 tbsp vanilla extract
- 1/4 cup sprinkles + another 2 tbsp to top (optional if you're going low-histamine and don't want the dye)
Instructions
Line an 8x8 baking dish with parchment paper
In a large pot over medium heat melt the coconut oil and ghee
Stir in the marshmallows and cook until melted
Add the vanilla extract, rice cereal and sprinkles
Once well combined, press the mixture into the prepared pan, creating an even layer and using another sheet of parchment press down the top of the treats
Sprinkle the top of the treats with remaining sprinkles
Let sit for two hours then cut into squares and enjoy!
