Let’s bring the mug cake back with this easy, low histamine and paleo recipe!
My husband and I are planning on moving in the next few months and I’ve been trying to not only clean out my closets, but also clean out the pantry.
I’m a self proclaimed pantry hoarder (that’s pantRy, not panty…).
What’s my hoarding food of choice? Flour.
I love playing around with different kinds of flours – cassava, almond, rice, tigernut… They’re all stacked up in my kitchen waiting to be used. So, as moving day looms, I’ve been attempting to put them all to use!
One of my fave quick breakfast meals is a mug cake. There’s only a few ingredients needed and it’s so simple to whip up! Best yet – this version is naturally sweet because of the tigernut flour, so there’s no need for sweetener (unless you want a little syrup to top it off).
What’s tigernut flour? It’s not a nut, as you may think. In fact, tigernut is actually a root vegetable that grows in Northern Africa and the Mediterranean. Tigernut flour is naturally gluten free, paleo and packed with protein. It’s also a great alternative to nut flours in baking and cooking for those looking for a low-histamine or nut-free flour.

- 2 tbsp Tigernut Flour*
- 1 egg, whisked
- 1 tsp Hemp Milk
- 1/4 tsp baking powder
Instructions
Add all ingredients to a mug and mix until well combined.
Microwave the mixture in the mug for 1.5 to 2 minutes (cooking time may change depending on the power of your microwave).
Top with blueberries or your choice of fruit!
Notes
*I used Tigernut flour which is naturally sweet. If you choose to use another flour alternative, you may want to add a little sweetener (either honey, maple syrup or coconut sugar).
