I know I know, how basic of me to create yet another protein power ball recipe. The web is simply bursting with these snack recipes. But, if I’m being humble, these power balls are pretty much the best I’ve ever had <– NOT humble.
Most power ball recipes use oats as a binding agent, but I actually can’t tolerate oats. So I’ve configured this recipe to be dense enough to form a ball and delicious enough so that it doesn’t seem as if it’s missing a little somethin’ somethin’. If you’ve been following my story, I’ve been experimenting with almonds. Typically nuts are not low histamine, but for those of you who can tolerate them, here’s my oat-free, protein packed, easy to make power ball recipe.

No Bake Protein Power Balls - Almond and Coconut

- 1/2 cup almonds
- 1/4 cup shredded coconut
- 1 scoop protein powder*
- 3/4 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup carob chips
Instructions
Place the almonds in a food processor and blend until finely chopped
Add the coconut and protein powder into food processor and blend well
Add the almond butter, maple syrup and carob chips to food processor and blend until well combined
Scoop out a tablespoon of the mixture and roll around in your palm to make a ball
Keep in refrigerator for up to 3 days
