Asian inspired meatloaf

I’ve been staying at my parent’s house in Connecticut the past week. They went on a little trip so I’ve been dog and house sitting. Usually they drop their dog off with me in Brooklyn, but this time I decided I wanted to take a little suburban respite where I would drive a car, go to the grocery store, maybe even shop in a mall.

Well, I did all those things and I have to say… I love it. My parent’s house is nestled in deep woods of a small town, so it’s easy to forget you actually are part of society. But for me, that’s the beauty of this past week. When you live in a city there is constant noise and personal interaction (whether you want it or not). But when you live where my parents do, you get to choose when you want to engage with others. Now, don’t start thinking I’m becoming a recluse. Far from it. But I’m realizing that the mind needs a break every now and then. It needs to relax and reset.

While I’ve been staying in the house I grew up in, I haven’t done much cooking. In fact, I’m doing less cooking here where there is zero food delivery services than in Brooklyn where you can get a dynamite sushi roll with a side of seaweed salad at 3:00 AM.

The one thing I have been wanting to whip up is meatloaf. It’s one of those dishes that totally reminds me of home. I remember kneeling on a chair at my parent’s dining table and mushing together the spices into ground meat, sprinkling cheese in the middle and rolling it all up into a nicely packed meatloaf. I think it was one of the first meals I ever learned to prepare!

I no longer use cheese in my meatloaf recipe. In fact, I don’t use tomatoes or ketchup when I make it either. My recipe is more of an asian inspired, savory and sweet, tomato-less meatloaf. And, guys, it’s delicious!

Sweet and Savory Meatloaf

Serves: 6 Cooking Time: 30 minutes

Ingredients

  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 16 oz ground beef
  • 1 egg, whisked
  • 2 garlic cloves, minced
  • 1/2 cup gluten free breadcrumbs*
  • 1/2 cup whole berry cranberry sauce
  • 1/2 tsp hot sauce (optional)

Instructions

Pre-heat oven to 450 degrees.

Mix together all spices and salt in a large bowl.

In same bowl, add the ground beef, egg, garlic, gluten free breadcrumbs and combine with clean hands.

Line a baking sheet with foil and spray with cooking spray.

Place the ground beef mixture in the center of the lined baking sheet and gently shape into a tightly packed loaf that's about 12 inches by 3 inches.

In a small bowl combine the cranberry sauce and hot sauce then evenly spread on top of the ground beef loaf.

Bake for 23 - 25 minutes or until cooked through.

Remove from oven and let rest for 2 minutes.

* I used Schar gluten free breadcrumbs
